“What makes a great biryani? Is it the spices, the rice, the chicken… or the slow magic of dum? Today, I’m going to show you my way of making Hyderabadi Chicken Dum Biryani — from freshly ground masala and crispy fried onions to perfectly cooked rice and the final dum.”

 

There are some dishes that are more than just food. They carry memories, traditions, aromas, and the stories of the places they come from.

Hyderabadi Chicken Dum Biryani is one such dish.

Fragrant basmati rice, succulent chicken, caramelised onions, aromatic spices, fresh mint and coriander, saffron and ghee — all slowly come together under the gentle heat of dum to create a dish that is as beautiful to experience as it is to eat.

The secret of a good biryani is not simply the list of ingredients. It is the patience involved in preparing each component and, finally, allowing them to come together slowly.

This is my way of preparing Hyderabadi Chicken Dum Biryani at home.


🌿 What Makes Dum Biryani Special?

The word “dum” refers to a slow-cooking technique in which food is cooked in its own steam and trapped heat.

In biryani, partially cooked rice and chicken are layered together with herbs, fried onions, saffron and ghee. The vessel is then tightly covered and placed over low heat.

As the biryani cooks, the steam remains trapped inside.

The rice absorbs the aroma of the spices and chicken, the chicken finishes cooking, and the flavours slowly blend together.

And that is when the magic happens.


🧂 Step 1: Prepare the Biryani Masala

The first step is preparing a fragrant homemade biryani masala.

Ingredients

  • Coriander Seeds (धनिया के बीज) – 3 teaspoons
  • Fennel Seeds (सौंफ) – 1 teaspoon
  • Shah Jeera / Caraway Seeds (शाही जीरा) – 1 teaspoon
  • Black Peppercorns (काली मिर्च) – 2 teaspoons
  • Bay Leaves (तेज पत्ता) – 2
  • Star Anise (चक्र फूल) – 2
  • Black Cardamom (बड़ी इलायची) – 2
  • Green Cardamom (छोटी इलायची) – 12
  • Cloves (लौंग) – 20
  • Cinnamon (दालचीनी) – about 20 small pieces
  • Nutmeg (जायफल) – 1 small piece
  • Mace (जावित्री) – a small quantity

Add all the spices to a mixer grinder and grind them into a fragrant masala powder.

Don’t worry if you don’t have one or two of these ingredients. The biryani will still turn out beautifully.

Freshly ground spices, however, make a noticeable difference to the aroma.


🧅 Step 2: The Golden Fried Onions

Fried onions, or birista (बिरिस्ता), are one of the most important ingredients in a good biryani.

Take approximately 4–5 medium-sized onions and slice them into long, thin pieces.

Heat approximately 10–15 tablespoons of cooking oil in a deep kadai.

Add the onions and fry them over medium to high heat until they become deep golden brown, crisp and brittle.

Keep a close eye on them because the difference between perfectly caramelised onions and burnt onions can be just a few moments.

Once ready, remove them from the oil and keep them aside.

Don’t throw away the oil.

The onion-flavoured oil can be used for frying the marinated chicken, adding another layer of flavour to the dish.

Make sure you prepare enough fried onions because they will be used both in the chicken marinade and between the biryani layers.


🍗 Step 3: Marinate the Chicken

For this recipe, we are using 1 kg chicken.

Ingredients

  • Chicken (चिकन) – 1 kg
  • Ginger-Garlic Paste (अदरक-लहसुन का पेस्ट) – 3 tablespoons
  • Homemade Biryani Masala (बिरयानी मसाला) – 1 teaspoon
  • Lemon Juice (नींबू का रस) – 1 tablespoon
  • Green Cardamom Powder (छोटी इलायची पाउडर) – ½ teaspoon
  • Red Chilli Powder (लाल मिर्च पाउडर) – 1½ teaspoons
  • Turmeric Powder (हल्दी पाउडर) – ½ teaspoon
  • Curd/Yogurt (दही) – 300 g
  • Salt (नमक) – to taste
  • Crushed Fried Onions (कुरकुरे तले हुए प्याज़) – 3 teaspoons
  • Fresh Mint Leaves (पुदीना) – a small quantity
  • Fresh Coriander Leaves (हरा धनिया) – a small quantity
  • Green Chillies (हरी मिर्च) – 1 tablespoon
  • Ghee (घी) – 1 tablespoon

Place the chicken in a large bowl and add all the ingredients.

Mix thoroughly until every piece of chicken is completely coated with the marinade.

Cover and leave it to marinate for at least one hour.

While the chicken rests, the spices, yogurt, lemon and herbs begin working together to build the foundation of the biryani’s flavour.


🍚 Step 4: Wash and Soak the Basmati Rice

Take 1 kg of good-quality basmati rice.

Wash it gently several times until the water becomes relatively clear.

Transfer the rice to a large vessel and add enough water so that the water level is at least one finger above the rice.

Let the rice soak for approximately one hour.

This helps the grains cook more evenly and allows them to become long and fluffy without breaking.


🍗 Step 5: Fry the Marinated Chicken

Heat the same oil that was used for frying the onions in a large kadai.

You can add some additional oil if required.

Once the oil is hot, carefully add the marinated chicken.

Cook it on high heat for around 15 minutes.

Then reduce the flame and cook for another 15 minutes or more.

The objective is to cook the chicken to approximately 80% at this stage.

You will know it is ready when the gravy has become thick and the oil is clearly visible around it.

Turn off the flame.

Remember — the chicken is not supposed to be completely cooked yet.

The remaining cooking will happen during the dum process.


🍚 Step 6: Prepare the Biryani Rice

Take a large vessel and add approximately 3–4 litres of water for 1 kg of rice.

Add:

  • Salt (नमक) – 2 teaspoons
  • Cooking Oil (तेल) – 1–2 teaspoons
  • Cumin Seeds (जीरा) – ½ teaspoon
  • Green Cardamom (छोटी इलायची) – 5–10
  • Cloves (लौंग) – 5–10
  • Star Anise (चक्र फूल) – 3–4

Bring the water to a boil.

Before adding the rice, taste the water.

It should be sufficiently salty — almost like a well-seasoned soup.

Now add the soaked and drained rice.

Cook it on high heat until the rice is approximately 75–80% cooked.

The grains should be cooked on the outside but still retain some firmness in the centre.

Drain the rice immediately.


🌼 Step 7: Prepare the Saffron Milk

Take a small bowl of warm milk.

Add 5–10 strands of saffron (केसर).

Let it rest for 20–30 minutes.

The saffron will slowly release its beautiful colour and aroma into the milk.

This will later be drizzled over the layers of rice.


🍲 Step 8: Layer the Biryani

Now comes one of the most satisfying parts — building the biryani layer by layer.

Take a large cooker, handi or deep kadai.

Add the ghee as per the recipe.

Now begin layering.

First Layer

  • One layer of rice
  • One layer of chicken pieces and chicken gravy
  • Another layer of rice
  • Fresh mint leaves (पुदीना)
  • Fresh coriander leaves (हरा धनिया)
  • 1–2 tablespoons saffron milk
  • A layer of fried onions (बिरिस्ता)
  • ½ teaspoon biryani masala

Second Layer

Add:

  • Another layer of chicken pieces and gravy
  • One layer of rice
  • Fresh mint leaves
  • Fresh coriander leaves
  • 1–2 tablespoons saffron milk
  • Ghee
  • Fried onions

Final Layer

Add:

  • Another layer of chicken pieces and gravy
  • One final layer of rice
  • Fresh mint leaves
  • Fresh coriander leaves
  • 1–2 tablespoons saffron milk
  • Ghee
  • Fried onions

Don’t rush this process.

The beauty of biryani comes from these individual layers eventually coming together during dum.


🔥 Step 9: The Dum

Now comes the moment when everything comes together.

Take a tawa and heat it gently over a low flame.

Place the biryani vessel on the tawa.

Cover the vessel properly.

You can use a clean cloth beneath the lid or seal the lid with aluminium foil to help retain the steam.

Cook on low heat for approximately 15 minutes.

Then turn off the flame.

But don’t open the lid yet.

Let the biryani rest, covered, for another 10–15 minutes.

This resting period allows the steam and flavours to settle.

And now comes the most exciting moment.

Open the lid.

The aroma of saffron, fried onions, mint, spices, ghee and slow-cooked chicken fills the kitchen.

That first burst of aroma is, for many biryani lovers, half the experience.


🍽️ Time to Serve

Gently serve the biryani without aggressively mixing the layers.

Try to take a little from the different layers so that every serving gets rice, chicken, gravy, fried onions and herbs.

Serve hot with:

  • Onion Raita (प्याज़ का रायता)
  • Plain Yogurt (सादा दही)
  • Mirchi ka Salan (मिर्ची का सालन)
  • Fresh onions and lemon

And finally…
